Deep in the Valley of the Giants lies peat unlike any other on earth—8,000 years in the making, unique to Western Australia's ancient landscape. It is this rare and earthy peat that Head Distiller Cameron Syme chose to define Darkest Winter, smoking premium Great Southern barley over an extended period to draw out its full, distinctive character.

Six years spent maturing in ex-bourbon American oak have shaped M759 into a whisky of real depth and complexity. On the nose, gentle smoke mingles with charred timber, spiced pear, rich molasses, and fresh hay. The palate opens into herbaceous smoke laced with subtle eucalyptus and caramelised butterscotch, before giving way to a smooth, nutty finish that lingers with quiet, smoky warmth.

Bottled at absolute cask strength, M759 is presented exactly as it emerged from the barrel—unfiltered, undiluted, and true to the cask. 

Darkest Winter has earned its place among our most awarded and internationally recognised whiskies, including World's Best International Craft Whisky at the 2017 ADI Spirits Competition in the USA.
