Welcome to our Porongurup Distillery  

Our newest location, Porongurup, is our ‘workhorse’ distillery and by far our largest working space. The home of Tiger Snake and Dugite, it draws on the best local rye, corn, and malted barley to produce a full-flavoured range of whiskies.

Nestled at the foot of the the Porongurup Mountain Range and with the Stirling Ranges and Bluff Knoll on the horizon, it is truly a special place where you can soak in the majestic surroundings and take a moment to appreciate how lucky we are.

A 4,800 square meter facility set on 30 acres, it houses kettles, brewing, old open top wooden fermenters, as well as stills, and a malting plant. It also has a 1,000 square meter barrel store on site. Porongurup houses a stable of both column and copper stills and has the capacity to produce around 50 - 70 barrels of whiskey each month.

Our 3,500 litre copper pot still is over 50 years old, and was rescued from a winery in South Australia after sitting dormant for many years. It was smuggled over the border to us before it could be sold for scrap, and patiently waited for 15 years before being called back up for duty. This still is 9 meters tall, and some tell us it is the tallest whisky still in Australia, eclipsing even the stills at Glenmorangie (known to be the tallest stills in Scotland).

This site produces 35 kilowatts of solar energy, and incorporates evacuated tube solar heating, which helps achieve the aim of being renewable and sustainable. 

Fittingly, Dugites and Tiger Snakes have visited the distillery on every significant date for the property – date of purchase, date of first distillation, date of first sour mash barrelling... we see them each and every season, not that that makes us any more comfortable.

It’s almost as if the local snakes slide in to check we’re doing things right by their whiskey standards.
