Sherry Cask becomes Apera Cask | A Refined Name, an Unchanged Character
In Australia, whiskies once labelled as ‘Sherry Cask’ are now named ‘Apera Cask’, in line with EU trade agreements protecting regional wine names.
The barrels themselves remain the same, imparting their rich, layered character. This change in terminology both preserves the heritage of European wines and highlights the quality and individuality of Australian fortified styles. Though the name has shifted, the whisky’s depth, complexity, and exceptional character are unchanged.
Our 700ml bottles available online are already branded as Apera, with 350ml and 100ml sizes to follow in the coming months.

Elegant and smooth, Apera Cask 43% (formerly known as Sherry Cask) is a core range Limeburners expression representing the brilliance of Australian Apera barrels.
This single malt was first matured in ex-bourbon American oak barrels for 3 to 5 years before being finished in an aged Apera cask, imparting flavours of honeycomb, burnt orange and maple sweetness.
Prior to bottling this expression is hydrated with pure Albany water, to bring it to an approachable 43%.
Handcrafted using traditional methods and copper pot stills, Apera Cask is a sophisticated single malt that can be appreciated by new and experienced whisky drinkers.
As each barrel will exhibit its own unique characteristics, creating slight variation from barrel to barrel, we utilise a blending system whereby several casks are emptied to a large holding tank and left to marry. Half of the blended batch is then sent for filtering and bottling, and the remaining half is retained and the blending tank is topped up with new barrels. Adopting this approach ensures there is a consistency of our products from batch to batch.
The average age of this product is 5 to 8 years.
