Limeburners Single Malt Infinity Solera Cask 43% - 700ml

At Limeburners, we’ve always celebrated the individuality that comes with small-batch, single-barrel distilling. But with Infinity Solera, we set out to achieve something different—a consistent, refined Australian single malt that retains character, complexity, and provenance with every pour.

Infinity is the result of our embrace of the traditional Solera maturation system—an approach rarely seen in Australian whisky. Our process begins with malt spirit matured in second-fill American oak ex-bourbon barrels. This is then finished in 500-litre South Australian port puncheons, where the Solera system brings everything together.

We employ a tiered system of port puncheons, where selected casks are emptied into a blending tank and left to marry. From this, only half the batch is filtered and bottled. The remainder is retained in the tank, which is then replenished with whisky from new barrels. As the Solera is never fully emptied, each release carries forward a fraction of the original casks—creating an unbroken lineage of flavour. The oldest whiskies in the system are now up to 12 years old, delivering exceptional depth and a true sense of continuity.

The result is a whisky of remarkable character. The port casks impart rich notes of ripe citrus, honey, and vanilla, balanced by a textured palate of strawberry jam, malt biscuits, and a delicate touch of oak-driven spice. A gentle dryness on the finish brings a savoury edge, making this a whisky of both complexity and approachability.

Add a splash of water and you'll reveal a second dimension—soft caramels and a rounded sweetness that nod to classic Speyside profiles, while remaining unmistakably Limeburners.
