Great Southern Distilling Company is an established, world-class whisky and gin distilling company with three distilleries located in Albany, Porongurup, and Margaret River, in South West Australia. Founded in 2004 by Cameron Syme, who was inducted into the Australian Whisky Awards and the Australian Distillers Association Hall of Fame, our family-owned distilleries have grown to produce exceptional hand-crafted premium and super fine spirits for consumers Worldwide to savour. Limeburners has twice won the "World’s Best International Whisky" award from the American Distilling Institute, five times received the "Best Australian Whisky" title at the World Whisky Awards and Australian Distilled Spirits Awards, and been recognised as the "Best Southern Hemisphere Whisky" by the Whisky Bible.
Limeburners Single Malt Whisky is the result of exceptional craftsmanship and an ideal climate, dedicated to producing perfectly matured whisky.
This whisky is crafted using premium Western Australian grains and pure, limestone-filtered water from an underground aquifer in Albany. The spirit is aged in American oak barrels previously used for bourbon, then finished in second-fill casks that once held Australian port wine. For peated whisky, we use peat sourced from the Giants Valley forest in Walpole, Southwestern Australia.
We take immense pride in producing this world-renowned Western Australian whisky, the result of meticulous research and continuous refinement at every stage of production.

When you think of the southwest of Western Australia, you imagine towering forests, breathtaking coastlines, and picturesque vineyards neatly planted in rows. This region is one of the 34 biodiversity hotspots in the world. Drawing inspiration from this extraordinary natural environment, Giniversity reflects the unique qualities of the land we inhabit.
Local plants such as Neem (Indian Sandalwood), Eucalyptus, Emu Plum, Boronia, and Lemon Myrtle each contribute distinct characteristics to our gin. The art and science of gin distillation blend wonderfully together as we continuously strive for innovation and new approaches to create something truly delicious and unique.

Tiger Snake Whiskey

Tiger Snake Whiskey
Tiger Snake Whiskey is Australia's first blended grain whiskey and is referred to as 'Sour Mash Whiskey' instead of 'Bourbon,' a term that can only be used for spirits produced in the United States. This style of whiskey began to intrigue Cameron when he was young, and the Tiger Snake lineup represents his journey to create the finest Australian whiskey.
This whiskey uses a classic grain bill of corn, rye, malted barley, and triticale, an ancient hybrid grain, all sourced from Western Australia.
